New Things...BAM

I don't know about you but not finishing projects is my middle name. Say for instance I wanted to blog, but got distracted by I don't know something shiny. That's me written all over it. Well I'm back and I don't really have much of an excuse to be gone this long. The holidays were BUSY and then I got distracted by a few good books (I love MY kindle). The only thing that sucked was that you missed me. I know because I swear I heard crying weekly when you came and checked to see if there were any new posts. Well you can hold back the sniffles because of have something fun to share.

My gym (BDCF) is having a Paleo Partner Challenge! Since this is a new year and well everyone and their mama is trying to lose weight. I figured why not try and be a follower. Plus I may or may not have grew a strong addiction to chocolate, lattes and did I mention CHOCOLATE. And you as well as I know there's nothing wrong with loving chocolate, but my jeans don't love it and either does my mirror. So I figure I'd come back to my blog and document my paleo eats for the week again. Basically another way of shoving it my teammates faces of how my partner and I are going to WIN IT. So game on.


Before I share my yummy food. I also, wanted to show a few other awesome new things that I'm loving at the moment and something new in general.

To start I got a new haircut. After the newness of getting banged awhile back wore off I began itching for another change. And that's when I got a banging bob. And here you have it...I love it!


My kite got me the greatest Christmas gift this year. A spanking new 55-200mm lens for my camera. My little girls is growing up and has a big rack now *sniffle*.


and the other thing is.... You're not allowed to laugh. I'm still tough and can kick your butt!! But I love knitting and you can't stop me. My intention if I don't get distracted is to make a infinity scarf. Hopefully I'll be done by June 1st.


And now that you think I'm 80, we can talk about food. I made a ton of food in the last two weeks, trying to get my mind ready for this challenge.


I started the week with crockpot Tangerine BBQ pulled pork. My kite's mother gave me a bunch of tangerines and I thought why the heck not. I paired with salad and almost burnt sweet potatoes.




I also made some broiled steak (I miss grilling) and some greek green beans.




For emergency protein I made some crockpot honey chicken.



And don't forget my favorite food ever...breakfast. I broke open one of Christmas gift which was Starbucks coffee. I made a badass latte while I made fried eggs, chicken legs, avocado and maybe some bacon (don't worry there is more bacon where that came from).






And since it was crazy warm a few days this week, we grilled some burgers. I paired it with the usual salad and almost burnt sweet potatoes




If you wondering what I did with all those tangerines I got. Oh you didn't?! Tough! You're about to find out.
I hand squeezed the rest of them and made a paleo-ish treat. Tangerine ice. After juicing I poured them into 3oz containers to freeze. It was delish.

NERD ALERT (By the way 16 tangerines will get you a little under 2 cups of juice. Now imagine drinking a normal 8oz glass of orange juice. That could equal 6-8 oranges. Oh snap! That's a shit ton of oranges you just consumed in one sitting. You're insulin is spiked and you'll be crashing out in less than an hour. Just sayin')







And there you have the beginning of the challenge of all challenges. Stay tuned. This is something I plan on finishing! I will not disappoint.

Thursday Comes Before FRIDAY

Today was such a chilly day. It made me want to wear a big warm sweater and sip a pumpkin spice latte ALL DAY LONG. Which I did none of. Instead I drank cold water and wore no socks. BRRR!
Although, it's inspiring me to start a few photo projects, so stay tuned.

On another note, have you met Speckles?! She's my cat. This chick has been with me forever! She's also that weird roommate that you live with that keeps you up at night, get's her grubby mitts all over your favorite sweater, is always hungry, and is overly affectionate with your boyfriend. But I love her and she's my bitch for life. No matter how weird her fetish is for plastic bags.
When I came home from work today, this is what I saw....Not suspicious at ALL! Please ignore the mess on the bed, I'm a messy dresser in the morning! So look away and focus on the silly cat!!

On to the the food. Last night before I went to bed, I rubbed down a pork roast with seasoning and put it in the crockpot for Bar-B-Q Pork which we had for dinner tonight. When I came home I turned the crockpot back on and got some tools ready to shred it, add shallots (kite calls it a fancy onion), some honey and your favorite Bar-B-Q sauce. I put it on high and let it get yummy, while I made some sides. Spaghetti squash for me and roast red potatoes for my kite.

Humpty Day

Today was one mega busy day. I started with going to BDCF for the 5:45am WOD.
Today's WOD was
Five rounds for time:
5 x pc. 95/65
3 x pp
1 x pj
200m sprints

I love anything Power Clean or Clean & Jerks. Those are just a couple of my favorites and trust me there's not many more workouts I actually can call my favorite. I really just dig the movements. I felt good, even though I didn't do it RX. I definitely could have, but wasn't feeling it when I did a practice round. I ending up doing 55 pounds for a time of 9m 25s. I was super glad to finish this workout quickly, because today was one of my teammate's birthdays and a couple of fellas were doing his birthday WOD that he created. I love cheering and/or watching men workout. Wink! It was definitely inspiring to see these guys finish this, especially since it was a scaled down version of our 9/11 memorial workout we're all doing this upcoming Sunday. Here are a few pics.

Dinner was fun today. We did some grillin'. Some TJ Italian sausage, perfectly seasoned steak, left over sweet corn, and a tomato/cucumber salad. Super fast and super easy. Plenty of leftovers. Say it with me people, 15 minutes till dinner. Shake the shock off of you and check these pics out. Side note--I love that slotted spoon. I only use it when I make cucumber/tomato salad. It's special.

Here's a pic of my dinner plate. Before you call the paleo police. Yes, I'm eating corn. And Yes, there's a little cheese on my salad. It's raw milk cheese. Sometimes I'm bad. Shut it. Also, don't drool over all the butter you're about to see.

After dinner I prepared some MORE lamb for the crock pot. I love lamb(or lamp). This is probably the most lamb I've put in the crockpot. And yes I got super excited. I seasoned the chops and let them marinade for a bit while I prepared a meatloaf. Not just any meatloaf, but I was inspired by Nom Nom Paleo's blog. She made Super Porktastic Bacon Meatloaf
I made a few alterations, because this week is use "What We've Got" week. I did however use almond meal instead of coconut flour. And I didn't even have that. I did however have almonds and a blender. So I made my own. These are before pics. You'll have to wait till tomorrow for After shots.

Back to Grindin'

The three day weekend is over. And fall is officially here. Before we left P-Town this weekend the puppies and I got to go for a leash-less walk. I was super proud of my little guys for NOT running away when that had the chance. Here are a few pics from our fall-like day.

Now that it's Tuesday even though it feels like a Monday! It's back to makin' the food. And grindin' the pepper. Okay, okay I'll stop! Gosh! This week you'll be seeing meals made with 'What We've Got' in the freezer. Tonight was baked Tilapia with lemon butter sauce. And a not so simple salad. IT WAS MMmm MMMmmm Good!

After dinner and some relaxing. I ran to Trader Joes (TJ's) for coffee, heavy cream, and possibly some bacon. I got back to season some pork back ribs with my secret rub to put in the crockpot overnight for lunch. While the ribs were marinading for a bit. I chopped up some sweet potato to fry in coconut oil for post-workout breakfast in the morning. Easy Peasy.

By The Way! I have not a clue how these PHONEY Paleo Chocolate covered almonds got in my cart. But my gosh, I am NOT going to let this sucker's go to waste. Paleo ENOUGH baby!
